Ingredients:
1 cup heavy whipping cream
1/4 cup confectioner's sugar
6 oz. dark chocolate
Preparation:
Break chocolate into small pieces. In a microwave-safe bowl, melt chocolate for 30 seconds. Using a small spatula, fold melted chocolate with still-solid pieces. When incorporated, place bowl back in the microwave and reheat for another 30 seconds. Remove bowl, fold chocolate until completely melted. Set aside.
In a large bowl, beat heavy cream on a medium setting for about 1 minute. Add confectioner's sugar. Continue to beat until fluffy, but be careful not to over-beat or the mixture will lose its heavenly whip.
Using a spatula, fold the melted chocolate into the whipped cream mixture. Be careful not to over-incorporate. Cover bowl and place in refrigerator for at least 1 hour before serving. The mixture can also be used as an easy pie filling! Enjoy!
